CATALOG CHICKS

Grumpa Joe loves chickin’. He likes it roasted, broasted, grilled, fried, cooked in soup, and diced into a salad. All his life he had chickens to eat. His mom raised chickens for many years in the backyard coop.  She stopped when she finally discovered that it was cheaper, and easier, to buy a fresh chicken from the chicken store.  Until then, she raised chickens for our consumption.

Every spring, in March, the mail man arrived with a large, flat, box with holes all around the sides. The box made noise because inside there were two dozen newly hatched chicks ordered from the Sears catalog.

 

The chicks, squeezed into the box, were yellow, and furry. They hatched just a few days earlier. The cute fuzzy cheepers were fun to watch.  Outside, the temperature was still too cold to put the chicks into the coop, so Mom kept them in the house.

She got a large cardboard box with tall sides from the store, lined it with newspaper, then took it upstairs to my brother Will’s bedroom. The chick’s new home was near the window, and next to the heat vent.  Mom put a watering dish into the box with a feed tray.  She fed them finely chopped, boiled eggs. Figure that one out, which came first?

To keep them warm, she placed a light bulb over the box to give them more heat and light. As the chicks grew, she switched their diet to chicken feed. In a couple of weeks, the chicks doubled in size, and began to get their feathers.

When the weather got warmer, Mom moved them outside to the coop. There, they grew up to provide us with eggs. Eventually, they made it to our Sunday dinner table; yum, yum, yum.

Cooking is something that eluded me until I was forced into it. Then, I wanted to be Emiril overnight. I began watching cooking shows on TV to learn. Between the Food Channel with Emiril, Rachel, Mario, Bobby, Paula, Julia, Martha (yes I confess I watched Martha), and the memories of watching my mother in the kitchen I learned the basics.

Hunger is the mother of all cooking, and it became necessary to reinvent myself as a chef to satisfy that basic drive.

Over the past ten years, my appreciation for cooking gadgets has become overwhelming. First it was a proper knife and cutting board, then a whisk, a thermometer, a timer, and a salad spinner. I learned to use olive oil to saute (fry). Peggy showed me a vertical rotisserie for roasting meat, and a electric roaster oven.

The challenge was to use them all to cook, not just good, but great meals. The rotisserie was the first adventure with a whole chicken. Man did it turn out juicy. The success with the chicken led me to try a beef roast; it became another juicy success.

Thanksgiving turned into a challenge. We invited the entire family; all twenty-four of us. The volume of items being brought to the house in combination with the turkey and stuffing put a strain on our oven. That’s when we broke out the roaster oven and used it to make the turkey.

Among the best cooking gadgets ever invented is the George Foreman Grill. What a great way to heat meat evenly. Our first Foreman grill is worn out. It still works, but the Teflon is gone. During our winter hiatus to Arizona, we missed the Foreman so much we bought a new one.  We used it daily. The new one has removable plates and is easier to clean.

Two years ago, we visited friends in Georgia. I chronicled the trip in a post called Needed Downtime. Our hosts, Lou and Lori made us a huge breakfast of bacon and eggs. They cooked a pound of bacon to perfection in a record time without a mess.

“How did you do that,” we asked?

“We used our Nu-Wave cooker,” said Lori.

“What is that?”

That started them raving about this really cool gadget. They told story after story of how they use this thing to cook chicken, steaks, and even vegetables. Of course, we got a demonstration on how easy it is to use, and to clean.

“I’ve got to get me one of those,” I told them.

Fast forward one year.

Peggy and I are tourist shopping in Branson, Missouri. I should restate that, Peggy was shopping, I was gawking at the young ladies behind the counter and trying not to look conspicuous. The next thing I see Peggy walking toward me with a huge box.
“I bought you a Nu-Wave.”

My reaction was that of a normal husband, “you did what?”

“I bought you a Nu-Wave cooker.”

“How much was it?”

“Never mind, just take it, this box is heavy.”

So began my love affair with the Nu-Wave. We’ve had it nearly one year, and I have used it to grill steaks, chicken, pork chops, pork roast, turkey breast, sirloin-tip roast, potatoes, and fish. The feature I love best is the cooking card that gives me cooking times for both defrosted and frozen items.

Very often, we make our menu decision on the spur of the moment. We can take rock-hard frozen pork chops and put them on the Nu-Wave. I set the timer for ten minutes, then turn them over for another ten minutes, and wallah, we have tasty tender pork chops. While the chops are grilling, we microwave a couple of small potatoes, and some broccoli.  In twenty minutes, we went from freezer to table and made a meal fit for a king.

Here are some photos of a whole 5.5 pound chicken fully defrosted and the Nu-Wave. The cooking time is 15 minutes per pound. In seventy-five minutes the meat temperature is right on.

My Nu-Wave is now the favored appliance in the kitchen. At Thanksgiving, the turkey is in the roaster oven and a turkey breast is in the Nu-Wave.

We still use the grillerator, but steaks, roasts, and whole chickens are better on the Nu-Wave.

This morning the devil made me eat a greasy Krispy Creme donut. I savored it with great enthusiasm. I know it is bad for me, but how long can one live anyway? Grandma Peggy read the advertising on the box and was surprised to learn that the company has been making donuts since 1937. That means Krispy Creme has been selling heart plugging fat loaded tasty sugary treats one year longer than I have been on this planet.

When Krispy Creme became a rage back in the ninety’s I followed the crowds to a local store to learn what it was all about. I also wanted to buy a dozen of the freshly made donuts. My friends were explaining the automated machine they used to make the donuts right in the store. It is a tradition at the office to bring donuts on your birthday.  I especially loved birthdays when we celebrated with Krispy Cremes. When I bit into my very first one, my brains cells awakened from deep within. The taste brought back childhood memories.

On the day I first walked into the Krispy Creme store in Oak Forest, I couldn’t believe my eyes. There, right in the center of the store, was an automated donut making machine.  I couldn’t take my eyes off of the process. Wait a minute, my brain told me. You’ve seen this machine before.

When I was seven years old, my mom went shopping on 63rd and Halstead. There was a cluster of large stores there, Sears, Wieboldt’s, Goldblatt’s. It was the shopping center of its time. To get there we took the streetcar. Two transfers, and an hour got us to the commercial center of the south-side.  She loved to window shop and never bought anything she didn’t absolutely need. One of her favorite stores was Hillman’s. A large grocery store on the lower level of another large store. Hillman’s was unique, because she got foods there that were not available in our community of Burnside. It was in that store, that I saw my first Krispy Creme donut machine. I was fascinated by the thing. I could spend hours watching the thing spit out raw donut dough and turn the glob into a glazed donut. Mom saw this quickly, and realized that she could shop while I watched the donuts.  The donut machine became my baby sitter.  Every once in a while, Mom bought some donuts to treat us for being good.

The whole memory came alive this morning when I bit into that sumptuous sweet glazed donut.

Oh My God, Did I Just Jinx Myself?

I am proud to announce that out of six record-setting blizzard snowstorms that dropped over twelve inches of snow on the Chicago area, I  shoveled out of four of them.

The worst was in nineteen sixty-seven. Everyone who was alive at the time remembers that one. Many of my friends who worked downtown took three to seven days to get home. Stories about people helping people abound. Stories about the adventure of leaving a car stuck in the snow somewhere were plentiful. I got lucky on that storm. My job was in the city on forty-eighth and Halstead. Normally, it was a fifty minute drive. That Thursday morning it was snowing. There was a drift in front of my garage door that tapered out to the street sixty feet away. The drift was pretty high, so I decided to call in and tell my boss that I’d be a little late because I was going to wait a couple of hours before I began shoveling my car out. It kept snowing, and it kept snowing, and it never stopped until the next day. By early afternoon there was a nine-inch accumulation around the city. People left work early to get home. Many of them did not make it home that night. Some didn’t make it home for several days. I sat in a nice warm house watching it happen.

My neighbor, Kevin Caulfield, didn’t get home until Monday. He abandoned his car along the Outer Drive. The following Saturday, five of us armed with snow shovels, piled into a car and wove our way through the city streets to look for Kevin’s Ford. The streets were barely passible. Many places were still one lane wide. We managed to find Archer Avenue and headed toward the loop. I think we took Twenty-second street out to the Drive. The Outer Drive, Chicago’s showpiece road, was a war zone. The fire department and garbage collectors had worked feverishly to open two lanes. They cleared a section of road up to a car,  yanked the car off to the side into the clear spot,  and moved forward to the next car. There was no place to put the snow, so they piled it onto the cars they just moved. One week of labor and they had cleared a path to move in.

We scoured the area that Kevin remembered leaving his car. Eventually, he spotted the ugly green fender showing through a mountain of snow. It was his Ford. The five us worked quickly to  uncover the car. The front bumper was hanging. The snow crew yanked it off while moving it out-of-the-way. Again, the five of us managed to bend it upward so the car was drivable. We extricated the car and Kevin got it running. We followed him home to make sure he got there.

I’ve seen pictures of yesterday’s snow on the Outer Drive. They remind me of nineteen sixty-seven.

This morning, I dreaded going out to shovel (sno-blow). I procrastinated at my desk. I watched the birds play hide and seek in the evergreen shrub outside my window. Then, Mary, my neighbor across the street came out to snow-blow her drive. “Hey Peg,” I yelled. Grandma Peggy  came to see what I wanted. “Look what some wives do for their husband.”

“She’s less than half my age,” she said.

“Well, I guess it’s up to me,” I said out loud. Ten minutes later, I went at it with a vengeance. Three non-stop hours later, I had cleared a lane from the garage to the street.

I came in exhausted and very hungry. Something smelled good. I wonder what she is cooking for me. Grandma Peggy, was clearly upset. The smell turned out to be a pot of turkey soup that burned. She had been defrosting the frozen soup on a low heat and forgot about it until all the liquid had boiled out and the turkey was frying itself to the pan.

The doorbell rang. It was my son Mike and my grandson Dan. “Now you show up,” I kidded him, “It’s all done.”

“I just finished my own drive for the second time Dad, if you want , I’ll do the other half of yours.”

“Go for it,” I told him. Mike and Dan made very short work of the remaining half. They finished in forty-five minutes. Ah, to be young again. The boys didn’t stay long because they were going to his father-in-law’s house to clear another drive. I ate a sandwich and crashed. I’m beginning to feel the love all through my body. I think the muscles are sending me a message, “Don’t you DARE do that again.”

If the pattern stays on course it will be twenty years before we see another twenty-inch snow.

Frankfort Chili Cookoff

Today, I walked into town around noon. That is much later in the day than usual. The sky was a weary gray, the temperature in the thirties, and a wind blowing from the North. I was glad to reach town so I could relieve my morning coffee at the Trolley Barn.  Usually, these walks are solitary. I don’t see anyone, and there are only a few cars on the roads. Today, as I entered town there was activity everywhere. One look at the Breidert Green, and I remembered that Winter on the Green was sponsoring a Chili Cook Off today.

The Breidert Green is named for Burton Breidert, a long time resident now deceased, who owned the B & L lumber yard, which became Fox Lumber, and is now My Sisters and Me, a dress shop.  I never met Burton because he was dead before I moved to town twenty years ago. I learned of him during my research for the Lions Club. He was a prominent Lion and generous community  member. He is credited with the town plan and insistence on keeping the business community central rather than spread around. At least a portion of his fortune came from supplying the building material used to construct the Prestwick sub-division. I lived in Prestwick for fifteen years, there is a minimum of four hundred houses there. Not one of them is small. That’s a whole lot of lumber to sell.

The Green is now a community park which is used for many functions. During January, it is Winter on the Green.

The place was jumping today. The focal point is a structure referred to as the Frankfort Station. It is on the spot that a real railroad station existed many years ago when a real train ran through town on what is now the Old Plank Road Trail. The trail borders the Frankfort Station. The Station is a source of electricity and it was supplying the chili cooks. There were a number of amateur and serious cooks vying for bragging rights to their chili.

The public is invited to attend and eat chili on this day, but I was a half hour too early to try any. Based on the crowd that was already there, it promised to be a succesful event.

I took pictures and went about my walk. I did finally stop at the Trolley Barn to relieve myself. The Trolley Barn was jumping too. The guitar shop was loaded with students learning how to play, the Children’s Museum was crawling with kids, the Deli was busy with a lunch crowd, and the upstairs coffee shop and book store was busy too. The Barn got its name from the building itself. It was used for maintaining diesel-electric railroad cars back in the nineteen-twenties and thirties era. During that time a commuter line ran between East Chicago and Joliet, It played a key role in transporting people from town to town in the far south suburbs. The building remained empty for years until an entrepreneur bought it and converted it into a mall for small businesses.   The Trolley Barn replaces the Grainery Building which was a major tourist attraction. The post and beam building burned to the ground in the nineteen seventies.

Frankfort is a great town established in eighteen fifty. It retains the charm of that era while it grows into a major modern suburb with a thriving population of sixteen thousand people.

The Chamber of Commerce does an outstanding job in keeping the character of the business area thriving while maintaining the character and history fo the town.

Next Sunday is Super Bowl Sunday, and most of us will be watching the interview between our president and Bill O’Reilly while the festivities on the Green take place. The following week  a Turkey Bowl  is the final event in the series.
