One of my favorite dishes is “chicken paprikash.” The recipe is here. It has to be served with the home made egg drop noodles referred to as spatzle.
Chicken Paprikas (Csirkepaprikas)
1 onion chopped 2 Tbsp. salt
4 Tbsp. shortening 4 to 5 lb. chicken disjointed
1 Tbsp. paprika 1-1/2 cups water
1/4 Tsp. black pepper 1/2 pt. sour cream
Brown onion in shortening; add seasonings and chicken; brown 10 minnutes. Add water; cover and let simmer slowly until tender. Remove chicken; add sour cream to drippings in pan and mix well. Add dumplings; arrange chicken on top. Heat through and serve. For more gravy add 1/2 pint sweet cream to sour cream. Serves 4-6 people.
Dumplings (spatzle)
3 eggs beaten 1 Tbsp. salt
3 cups flour 1/2 cup water
Mix all ingrediaents together and beat with a spoon. Drop batter by teaspoonsful into boiling salted water. Cook about ten minutes; drain; rinse with cold water. Drain well and add to parikas. Chicken paprikas may be served with fried noodles instead of dumplings.
Grumpa Joe note. You may have to continue adding water to the flour mixture above until the dough is the consistency of pancake batter.

Dobos Torte
This cake is a usually a work of art.
I know why my mother only made a few of these cakes in her lifetime. It is a huge amount of work. The result is well worth the effort. The recipe will not receive the recommendation of the American Heart Association.
The cake is supposed to have seven layers separated by the light chocolate frosting. The top usually has a carmel topping. The outside is best with a dark chocolate. My cake had the same light chocolate frosting inside and out. I lost one layer to experimentation so my cake is only six layers.
Each layer is only a quarter of an inch thick. The frosting between layers is the same.

This year I baked bread for Easter. It is a tradition my mother had. I loved helping her. The aroma of fresh baked bread permeated the house, and raised visions of childhood past.

EAT! (this cake can easily serve 2 )

My wife and I were just talking about this.. here grandparents are hungarian and this is the family’s favorite dish.
Joe you should visit (unless you already have) the Epicurean Restaurant in Hillside, IL http://www.thehungarianrestaurant.com/, they serve traditional Magyar food. Unfortunately they no longer have a liquor license so you can not order any traditional Magyar spirits. But not to worry you can bring your own and this can be obtained at Bende in Glen Ellen…http://www.bende.com/index.html
Take care.
